Weekend Eats

I feel like I’ve had a lot of good food recently and need to share!

Starting off with breakfast – I haven’t only been eating overnight oats for breakfast. Since it’s fall, the cooler mornings make me want something warmer, like regular oats! So I had cooked oats with PB & J. Yummm 🙂

I have been mixing chia seeds into my oats when I cook them, and I’ve noticed a change in the texture {for the better!}.

Then dinner on Friday night was at b.good, a “fast food” burger joint that uses fresh ingredients and is made by people, not factories. I ordered the Avocado and Orange salad with grilled chicken, and a side of sweet potato fries. This meal was heavenly. The goat cheese on the salad was so fresh and flavorful, the avocado had just been sliced, and the chicken was straight off the grill. The fries were warm and crispy, with a chewy middle. My mouth is watering from looking at this picture.

Saturday night, I got a text from my friend Emily asking if I wanted to grab dinner at the Pour House, a pub right down the street. They have half price burgers on Saturday nights, so I got a {veggie} burger with blue cheese. AH-MAY-ZING. Seriously. And I got a tall beer for a total of…. 12 bucks!! Good deal, I’d say! No pic of the burger, and I only thought to take a picture once I was already done with my beer.

The atmosphere was very cool, though. A lot of college kids, loud music, fast-paced and busy. It was fun! We had a good time talking yelling over the music and catching up 🙂

I know what you’re thinking… I did go out to eat more than I should have this weekend, so here comes a week of frugality. Also, I just signed up for Starbucks Rewards… am I the last Starbucks customer EVER to do this?! It seems to me I will save quite a bit – my soy misto order is pricey, but with the rewards I can save 60 cents every time I get one {after I use my registered card 5 times}! I’m mad at myself for not doing this earlier. I probably would have saved hundreds…. oops!

An Assortment

I was all excited for lunch, then when I got back to my apartment I realized I didn’t have everything that I needed! Time to go grocery shopping. ($$$$)

So I searched around the fridge and came up with an assortment of things.

On the plate: hardboiled egg, tomato wedges, carrot sticks, red pepper slices, garlic hummus

On the side: applesauce with a sprinkle of cinnamon…

& an orange

If you think that filled me up… think again. I had a few tortilla chips dipped in leftover refried beans for an appetizer 🙂

And in a sudden turn of events… I laced up my sneakers and headed outside for a run! I went alongside the Charles River on the Esplanade for a bit, then turned around.

I estimate I ran jogged a total of 2.5 miles, and walked some to total a little over 3. It was tough. I struggled. But I did it, and that’s what matters. Now for a night of guilt-free rest 🙂 Those are the best, and make the difficulty of running (rather, getting back into running) worthwhile.

New Recipe and Good Eats

Anytime I find a healthy food that tastes like it’s bad for you, I’m in love. These sweet potatoes were so good, and almost embarrassingly simple.

Crunchy Sweet Potatoes, adapted from KathEats

1 serving

Preheat oven to 400°

  • 1 sweet potato
  • Drizzle olive oil
  • Salt

Wash and slice sweet potatoes (any cut will do, but I think the thinner the better) and leave skin on. Put potatoes in a bowl and drizzle with olive oil, just enough to lightly coat the slices (1/2 tbsp?). Sprinkle with salt (I used kosher) and shake around.

Here’s the part that’s the key to making these potatoes crispy – spread slices on a cooling rack placed inside a baking pan. Supposedly this allows for the heat to circulate around the whole piece, and makes it crunchy. Cook for 45 minutes. Let me know how they come out if you try this! I think they taste just like sweet potato fries.

Out of the (Lunch)Box

I didn’t pack a lunch today, so I treated myself to take-out. I ended up having one of the best burritos I’ve ever tried. I highly recommend Blue Burrito in Westbrook. I got the Veggie on a wheat tortilla, which had black beans, rice, tomato, corn, and, my favorite, avocado. There was a mild salsa in there, as well.

It was such a cheap lunch – under $7! And it came with chips and salsa, although the salsa was a bit too spicy for my taste. It put me in a coughing fit – I just wasn’t expecting such a burn. I got used to it, though.
