Shipping Up to Boston

Well, technically, it’s shipping down for me.

Tomorrow I move into my first apartment! The Uhaul is packed, the car is filled with boxes, and the Pumpkinhead is ready to be cracked open (once we are all unpacked, of course). ๐Ÿ™‚

Things will be crazy tomorrow, as September 1st is when the majority of students living in apartments move in. It is sure to be an adventure.

While I will probably be taking a short break from the blog until I get settled in, I will definitely post pics of the final results, including some DIY projects and first meals in the apartment!

Spontaneous Run and Luna Bar Review

I woke up an hour before my alarm went off this morning, and I could feel the cool breeze blowing through my bedroom windows. It was perfect running weather – by the way, to me this means it was about 60ยฐ and the sun was rising. I get really hot and sweaty when I work out, so cool, breezy weather is my favorite to run in.

It’s been a while since I’ve done any kind of exercise, so I felt great about getting in 2 miles. I used to be able to run much further, but I’m trying not to dwell on that, and instead feel good about doing something.ย Running is really the only exercise that gives me a high. My dad works out a lot, and is definitely more of an advocate of lifting weights and strength training. I’ve tried that before, but honestly running is the only thing that makes me feel like I truly worked out. I love it, and am anxious to get back into running longer distances – as long as I stay injury free (fingers crossed!).

Now for something a little different! Review of a snack bar – I am always on the hunt for new brands and flavors. Luna Bars have been a longtime favorite of mine, and I tried a new flavor today so I wanted to share my thoughts on it.

Peanut Honey Pretzel

Taste: B

Very sweet, a little salty

Nutritionals: B+

Sugar is high, but protein and fiber are decent

Low in calories for a snack

Overall: B

My preference is either the White Chocolate Macadamia or Chocolate Dipped Coconut flavor ย – I’d have this one again, but I’d choose other flavors over it.

Packing and Painting

I’ve had a busy couple of days, between going through my clothes, beginning to pack, shopping for necessities, and working on some projects. Rather than tell you, I’ll show you –

How do those socks taste, Baxter?

Newly painted dresser! It used to be black with silver knobs, but I wanted something more feminine. Cream colored paint and black spray paint gave me exactly the look I was hoping to get. I also took the idea fromย this postย and had my dad help me make a shelf where the top drawer would go. It’s a great space for books and little decorations, especially because I am without a desk this year.

Told you I was all over the place! But that’s kind of where my head is right now – frazzled from thinking about packing and purchasing apartment things and finishing last minute details. I leave for Boston in a week! Fun projects are coming up – I’ll be sure to share ๐Ÿ™‚

New Recipe and Good Eats

Anytime I find a healthy food that tastes like it’s bad for you, I’m in love. These sweet potatoes were so good, and almost embarrassingly simple.

Crunchy Sweet Potatoes, adapted from KathEats

1 serving

Preheat oven to 400ยฐ

  • 1 sweet potato
  • Drizzle olive oil
  • Salt

Wash and slice sweet potatoes (any cut will do, but I think the thinner the better) and leave skin on. Put potatoes in a bowl and drizzle with olive oil, just enough to lightly coat the slices (1/2 tbsp?). Sprinkle with salt (I used kosher) and shake around.

Here’s the part that’s the key to making these potatoes crispy – spread slices on a cooling rack placed inside a baking pan. Supposedly this allows for the heat to circulate around the whole piece, and makes it crunchy. Cook for 45 minutes. Let me know how they come out if you try this! I think they taste just like sweet potato fries.

A few things I’m really enjoying at the moment:

1. Girls

This show is a hilariously accurate portrayal of friendship and life for girls in their young 20s. I finished the first season in 2 days, and am anxiously awaiting the second season, supposedly coming out in January.


2. Gossip Girl

I know – ridiculously cheesy and overly dramatic. BUT so good. & there are a ton of episodes to catch up on, so I have something to keep myself occupied while I wait for the return of Girls. ๐Ÿ™‚

3. Breakfast of choice: oatmeal {still}. Sorry to say I haven’t felt like anything else the past couple weeks.

4. Maxi Dresses. I only have one, but I will definitely be purchasing a couple more before I head back to school. I love the free-ness of them, especially in the summer heat. And also because I have more than a few pounds to lose… they cover things up quite nicely ๐Ÿ™‚ I love the print on this one:


5. Warm coffee in the morning – it’s my way of making it feel a little more like fall. I just try to ignore the heat… I am so excited for cool mornings and the beautiful scenery that comes along with a new season.

Windy City: Part 2

Sunday, our second day in Chicago, began perfectly. Waking up in the hotel was a lot better than pulling an all nighter to travel. We got ready, went downstairs to get breakfast, and walked over to Navy Pier to catch the double-decker trolley. The 2 hour tour around the city gave us a much needed break for our feet.
